Crayfish Etouffee

This is an easy to create taste sensation!

Ingredients

        1- Stick Butter
        1- Bunch Green Onions (chopped)
        6-8 lbs whole crayfish or 2 cups of picked boiled crayfish tails.
        some crayfish "fat"
        2- tbl  cornstarch dissolved in 1-cup of cold water
        cayenne pepper - to taste
        salt (if needed) to taste
        2 tbl Tomato Sauce
        1/4 cup chopped parsley or shallot tops
        boiled rice

In a large skillet, saute green onions in butter until soft (or translucent), then add crayfish "fat" and tails.  Stir and mix for 3-5 minutes.  Add tomato sauce and cornstarch-water mixture and stir over medium heat.  (check thickness - if too thick, add water).  Add cayenne to taste (start with 1/4 tsp stir well and taste to check hotness).  Taste BEFORE adding salt because often the boiled crayfish have alot of salt already.  Simmer for about  5-10 minutes, top with chopped green   onions or parsley and serve in bowls over hot boiled rice.
