Home Up Gumbo Etouffee Roast Crawfish

 

 

This is a great recipe.  Not for the un-adventureous

Cajun Pork Roast

 

Ingredients

Seasoning Mix

2 tsp. Black Pepper
1 tsp. White Pepper
1 1/2 tsp. salt
1 tsp. cayenne pepper
1/2 tsp. dry mustard
1 tsp. dried thyme

The rest of the Stuff !

3 tbl. unsalted butter - 1 - tbl oil
1/2 cup of finely chopped onions
1/2 cup of finely chopped celery
1/4 cup finely chopped green bell peppers
1 tbl minced garlic
1 - 4 lb pork roast

Combine all seasoning mix together.  Place all ingredients (except roast) in a large skillet.  Saute about 4 minutes or until vegetables are soft and clear, stirring occasionally so it doesn't catch. Set mixture aside to cool..

Make several deep slits in roast to form pockets, do not cut through the bottom.   Stuff pockets with some of the vegetable mixture (about half) then rub remaining mixture over entire roast by hand (this is the fun part).  You  may want to make additional mixture to mix with drippings to make a very spicy gravy later.

Bake uncovered @ 275 deg. for 3 hours, then @ 425 deg. until meat is dark brown on top, and fully cooked in center.

You may want to also add some small red potatoes around the roast (quartered with skin) and turn them so they can absorb the juices and flavor of the seasoning.
